We are searching for an experienced Maître d’ to manage our front of our house service. Knowledge of Cuban cuisine and culture is desired, but a passion for learning about Cuba and our mission at COPA is absolutely required. Basic proficiency in Spanish is a plus.

COPA is expected to open Mid-February to Early-March 2018 in Downtown Durham, NC. This is a full-time, salaried leadership position, ranging from $40,000 to $45,000 a year, depending on experience. Weekend and evening hours will be a requirement. (Must be over 21 to apply.)

The Maître d’ will be responsible for:

• managing the front of house team members
• managing reservations, special events, and catering orders
• greeting customers and knowing the regulars by name
• keeping the dining room in excellent order
• managing inventory for the front of the house.
The Maître d’ will work closely with Chef and owner Roberto Copa Matos along with Marketing Director and owner Elizabeth Turnbull.

Knowledge of permaculture and organic farming practices is required, as is creativity, a strong work ethic, and a passion for caring for the soil. COPA is expected to open March 2018 in Downtown Durham, NC. This is a salaried position starting at $30,000 a year.

The farm manager at Terra Sacra will be responsible for leading the farm program on a 10 acre, nascent farm. Duties include:

  • soil enrichment and management
  • planning, scheduling, planting, maintenance, and harvesting
  • working closely with Chef to execute the farm plans and grow produce needed for COPA
  • raising small animals for meat and eggs

A passion for research, recipe development, and creativity is required.
